The Beans

Since Fri asked...

I did, in fact, make beans and rice.
Using a set of instructions from Fridays Child.

Lots o beans.

I figured the instructions were prolly for
two or three portions with some left over...
So I doubled everything.
Woooo Boy,..  that's a lot o beans.
Everybody loved it.

We had beans and rice sunday.
Beans (and other stuff) over baked potatoes tuesday.
For tuesday I spit the remainder of the beans into two
Put the meat from ham hocks into a batch for daughter and I
Left the other alone for boy (vegetarian) and wife.

I used a black beans and pinto beans.
I would like to try lima beans (like Fri)
but knew the family (erm children)  would balk.

You did specify 1 pound of beans... But I figured I'd make twice as much,.. really 1 1/2 would have been better but the math is harder. If I had used only one pound of beans,.. we would have run out of beans long before my daughter ran out of her appetite for them. I prolly would have gone for red beans but,.. they had loose dried beans for $0.99/lb.

You're ever so welcome. Never thought about beans over baked potatoes -- I'm gonna try that.

I'm sorry I didn't tell you that I use a pound of dry beans. When I make beans it serves 4-5 people. We always eat off of it twice -- sometimes three times if I've made cornbread. I don't know what I was thinkin' when I didn't specify 1 lb! *blush*

Glad you enjoyed them. Mr. Man prefers red beans and I prefer the limas. Glad to hear it was good with the pinto and black beans. Never tried those.
